Description Cumberland Falls State Resort Park is in Corbin, Kentucky and is spread between McCreary County and Whitley County with the Cumberland River running through it. The big attraction here is the Cumberland Falls. It is also known as the Niagara of the South. Many visitors come to view the majestic falls and the magical Moonbow that is visible each month. This park is surrounded by the Daniel Boone National Forest and became part of the State system in 1931. If you are an outdoor enthusiast, then there are many other attractions here as well. Over 20 miles of hiking trails are accessible, there are kayak rentals, a swimming pool, and horseback riding too. The Food Service Operations Manager II will play a major role in the operations of the Riverview Restaurant at Cumberland Falls’ Dupont Lodge. Team skills are crucial to be successful in this position. This position will be at the center of dining operations for the DuPont Lodge.

The ideal candidate will:
  • Be courteous and professional at all times, while displaying a professional image through appearance and dress.
  • Work well as a team leader and a team player.
  • Be friendly when coming in contact with our guests.
  • Must be knowledgeable of the park and all park facilities.
  • Be able to answer guest questions about the park and surrounding areas.
  • Helping the guests feel safe and comfortable in any accommodation or facility.
  • Must be available to work weekends, mornings and evenings.
Job duties include but are not limited to:
  • Manages a high-volume food service operation for a multi-faceted state institution, facility, resort park, or hospital such as various venues and areas, and dual facilities.
  • Directs and supervises the daily operation of a food service operation.
  • Supervises and coordinates the work of staff involved with the preparation and serving of food.
  • Trains employees.
  • Applies and enforces departmental rules, regulations, and policies relative to food service areas.
  • Develops methods and procedures for preparing and serving meals, housekeeping, and maintaining sanitation and cleanliness of the food service areas.
  • Requests repair of equipment when necessary.
  • Purchases all food items, kitchen and dining room supplies.
  • Conducts inspection and analysis of food purchase specifications and operating records and reports.
  • Prepares menus and reviews for pricing, variety, and quality.
  • Prepares and maintains records and reports such as food cost reports, purchase orders, supply requisitions, time and attendance, logbook, payroll of resident laborers, health records, etc.
  • Responsible for walking in regulatory inspectors in relation to food service operations and providing plan of actions as needed.
  • Arranges, plans, and supervises the food service for conventions, publicity tours, banquets, and other special groups.
  • Supervises storage of food.
  • Plans and conducts in service training programs for all food service personnel.

Minimum Requirements EDUCATION: Graduate of a college or university with a bachelors degree with courses in food preparation, food management or a related area.

EXPERIENCE, TRAINING, OR SKILLS: Must have three years of experience in the operation and management of institutional, military or commercial food service operations.

Substitute EDUCATION for EXPERIENCE: NONE

Substitute EXPERIENCE for EDUCATION: Experience in one of the above areas will substitute for the education on a year-for-year basis.

SPECIAL REQUIREMENTS (AGE, LICENSURE, REGULATION, ETC.): If employed in the Kentucky Department of Parks or the Kentucky Horse Park, must be twenty years and one day of age at time of appointment. If employed in the Kentucky Department of Parks or the Kentucky Horse Park, must obtain S.T.A.R. (Server Training in Alcohol Regulations) certification from the Kentucky Department of Alcoholic Beverage Control within six months of appointment. Must maintain any required licensure(s), certification(s), or other credentials for the length of employment in this classification. Employing agency is responsible for ensuring employee possesses and maintains required licensure(s), certification(s) or other credentials.
